The four-year-old towering tower of Beverly-Cards, a bustling power lunch spot from the 5-star Hotel Monte-Hole today, neither Bouchon nor the Montage are still there.
But the pocket park in the Golden Triangle is to be fully occupied again in 2022.
Bouchon, which closed in 2017, is a new restaurant founded by Tommy Salvatore, former Craigs boss.
And Maybourne Hotel, which bought the Montage in late 2019, continues its food and drink offerings. Last year, the restaurant opened the old Scarpetta and Georgie space, The Terrace is a new bar with tables on the park. This fall, the hotel opened a new Cigar & Whiskey Bar with an iced tub and opened its new waterway on the street. It was one of a handful of public areas in Beverly Hills where smoking is allowed due to a grandfathered permit.
Now the Maybourne - whose sister properties include Claridge's and Connaught in London - has just opened a third space: the redesigned design (whose previous projects include the Upper House hotel in Hong Kong and a collaboration with Louis Vuitton and the Objets Nomades), designed by architects and interior designers.
This art-deco-inspired bar consists of a rich bar and polished nickel accents. It's paneled in ivory and charcoal grey burr walnut, and is complementing the aforementioned photographs by James McCartney, a British photographer with a unique logo, and contrasting white and blue leather with high barstools and Yves Klein blue.
The hotel's general manager Eugene Leonard describes the aesthetic as a meeting of Californian spirit and Europe.
The cocktail program is made up of highballs, sidecars, daiquiris, old-fashioned, flips and martinis. Overseen by head mixologist Chris Amirault (Otium), concoctions include the Killer Joe, an Espresso Martini with coffee from the Y.U.s Maru and homemade dulce de leche, and a Tiki Tea with Mal Bien mezcal, yuzu, coconut, lime and ceremonial green tea. There are various items to take care of on the menu. From a dry-aged burger to crispy chicken sandwiches to flatbreads and a Maine lobster roll with smoked trout roe.
